Rooted in tradition and crafted with care, Lamb’s Haggis brings an authentic taste of Scotland to Oregon. This recipe was originally created by Charles Lamb in 1993 and has been lovingly carried forward in his honor, continuing a legacy built on heritage, quality, and deep respect for the craft.
Made using a traditional Scottish preparation, our haggis features lamb heart and lamb liver, seasoned and blended for a rich, savory flavor. Due to U.S. regulations, lamb lungs are omitted; instead, we honor the original texture and depth by incorporating additional lamb heart, resulting in a beautifully balanced, deeply satisfying haggis that stays true to its roots.
It is both a privilege and an honor to carry on Charles Lamb’s work and to share this storied food with a new generation. Each batch is a tribute, to Scotland, to tradition, and to the hands that shaped this recipe over decades.
